For sale Wednesday, August 10, 2011: Tomatoes, cherry tomatoes, green peppers, red peppers, hot peppers, EGGPLANT, cucumber, beets, carrots sweet onion, garlic, kale, swiss chard and basil. All of this produce was grown at The Farm at St. Joe’s.
Here’s a babaganoush recipe I found on the Food Network.
Try grilling the eggplant instead of cooking it on the stove or in the oven. The slender Oriental style eggplants can replace the traditional Italian style in recipes.
Also, try roasting 2 or 3 beets (available on Wednesday) and adding them to the babaganoush. I promise you wont be disappointed by the color it turns.
